Scandinavian Almond Cake

Scandinavian Almond Cake!

For those of you who were at the Dessert Potluck exclaiming “Oh I remember how wonderful this was last year” “Who made the Almond Cake?” and “I want that recipe!” Char Nielsen has come to the rescue! She says the recipe comes with the pan, which is available at Danishmuseum.org or Amazon. Char’s notes in parenthesis!

 

Spray pan with Pam or cooking Spray (Bakers Joy with flour)

Beat well:   1 ¼ cup sugar, 1 egg, 1 ½ teaspoons pure almond extract, 2/3 cups milk

Add:           1 ¼ cup flour, ½ teaspoon baking powder

Add:           1 stick melted margarine (Imperial or Parkay work well)

Mix well.

 

Bake at 350 for 40-50 minutes. Edges must be golden brown. Cool in pan before removing. Cake will break down if removed too soon. Sprinkle with confectionary sugar.

Variation: before pouring batter into pan, sprinkle sliced almonds on the bottom.
